2 tbsp. lemon juice 1 box powdered fruit pectin 5 c. sugar Put blueberry juice into a large kettle. Stir in pectin and put over high heat and stir until mixture comes to a hard boil. Stir in sugar. Bring again to a full rolling boil; then boil hard one minute, stirring. Remove from heat, skim off foam; pour into glass jars. Put on lids and rings and let cool 24 hours. Note: Look for blueberry juice in the health food section. |
